I just love sausage rolls, they are a perfect snack, but also a great thing to bake and take along to parties ect. in my family my grandma is always in charge of bringing the sausage rolls (on boxing day normally) but I decided to give the humble sausage roll a little makeover and add cider glazed red onions, some grated apple and chopped rosemary. they where packed with full of flavour and a real winner with every one that tried them. I’m not going to lie I just couldn’t be bothered to make my own puff pastry, I know its naughty for a food blogger, I mean I am human after all, I can cheat once in a while, plus do you really have the time to make it from scratch every time? I do enjoy making my own puff pastry occasionally but I just really wasn’t in the mood in this occasion and the shop bought stuff is so good. so back to the real reason your here, they sound good right? I decided to buy some really high meat quantity sausages (98% meat) and push the meat out of the skins rather than buying regular sausage meat. I’m not sure if this helped but I’m sure it added to it. I think a normal sausage has about 80% meat in case you are wondering.

BIG NEWS. I made Olly some flaky pastry sausage rolls to take to work, and I didn’t eat a single one. Please be proud of me, I love these things. Anyway, I thought I’d share the recipe – this is something I came up with one Christmas, when I had loads of leftover cocktail sausages. I also had leftover filo pastry, and so this is what happened next. The parmesan and breadcrumbs are kind of a new addition to the pot, but I think the saltiness of the parmesan works nicely alongside the applesauce. You might disagree!

Amazingly delicious sausage rolls, with the nicest filling I’ve ever made. In future, I’ll probably finely chop the apple and onion. Not because I hate grating (which I do), but because it gave off too much liquid, and made the filling too wet and sloppy. I let it drain for 30 minutes before assembling.

Crispy sausage filled puff pastry bites dipped into a tasty curry ketchup, it’s hard to stop at just 1 or 2. These mini pork, apple & sage sausage rolls with curry ketchup are perfect to enjoy with drinks or just to nibble on and leftovers can be frozen. They can even be prepared ahead, refrigerated and baked off when you need them.Preheat the oven according to directions on the crescent dough package. Unroll the dough and separate into 8 triangles. Place a sausage and about 1 tablespoon of the apple mixture along the base of each triangle, then roll up completely to enclose the filling. Bend the sides slightly in toward the center to form crescent shapes. Place on a nonstick baking sheet and bake until puffed and lightly browned along the edges, about 12 minutes. Serve hot. Yields two rolls per serving.
